Another day, another recipe. I guess we will be rolling like that for a while now. How are you all doing? I hope all is fine and your week is treating you well. I have a cheesy loaded bacon scalloped potatoes recipe for you today, my son doesn’t love potatoes but funny enough, once cheese enters the equation, I have no complaints. If you love bacon, cheese and onions then don’t fret because all is included in this recipe. I always love adding something extra in most of my recipes be it more spices to give it a kick or specific meats to bring the flavour up a notch and let me just say, this recipe does just that. I promised myself not to go on rumbling and just dive straight ahead and share with you the recipe. For this cheesy loaded scalloped potatoes recipe, you will need;
Ingredients
- 100gms chopped bacon
- 1 tsp olive oil
- 4 large potatoes thinly sliced
- A kettle of hot water
- Salt to taste
- 1 tbsp butter
- 1 chopped onion
- 3 cloves crushed garlic
- 2 tbsp flour and a bit more if necessary
- 2 cups of milk
- 1 cup double cream
- A tsp paprika
- 1 tsp mustard
- 1/2 a tsp nutmeg
- 100gms cheddar cheese
- 50gms gouda cheese
- 1 tbsp mixed herbs
- More cheese for the topping
- Chopped coriander for garnishing
METHOD
- In a preheated pan, add your bacon with a tsp of oil and let it fry to slightly brown, then remove and set aside.
- Place your potatoes in a bowl, salt to taste and pour some hot water to cover and set aside making sure they are all covered.
- In a heated saucepan, make your roux with butter, onion, garlic and some flour and give it a good stir to cook the flour out a bit.
- Then in with your milk and keep stirring at this point to avoid having lumps. A whisk may be helpful at this stage.
- Add your double cream and keep stirring until well combined.
- Then add your paprika, mustard powder, nutmeg and give it a good whisk, it will start to thicken at this point.
- Go ahead and season with some salt to taste, then turn off the heat and add your cheese.
- Whisk until well melted then add some mixed herbs and mix once again.
- Take half of your bacon and mix it in the cheesy mixture.
- Preheat your oven to 180°C fan assisted oven.
- Drain your potatoes, you can arrange them in a baking dish bit by bit alternating with the cheese sauce.
- Or mix it all in the saucepan pour half of it in your dish, top with your bacon and pour the rest to the top.
- Sprinkle some cheese at the top, cover with aluminium foil and into the oven for an hour and until the potatoes are tender.
- Garnish with some coriander which is optional, let it settle for a few minutes.
- Serve and enjoy.
