BROWN SUGAR, GARLIC & MUSTARD GLAZED PORK LOIN

I know it’s been a minute but I am back now, I had totally forgotten how life with a newborn can literally turn you into a zombie or go a bit crazy at times but I am getting into a routine and hopefully I stay sane. I don’t know about you guys but the weather here has just decided to do it’s own thing and I have no idea when I am going to see some sun. So it’s back to evening roasts and cosy meals until it gets warmer and looks more like Spring. Today I have a fabulous recipe for you guys, if you tried my chicken wings then this brown sugar, garlic & mustard glazed pork loin will definitely put a smile on your face. Here is what you will need:

BROWN SUGAR, GARLIC & MUSTARD GLAZED PORK LOIN

Ingredients

  • Pork loin
  • 4 cloves crushed garlic
  • A third cup brown sugar(Depending on the size of your pork)
  • 2 Tablespoons Dijon mustard

METHOD

  • Preheat your oven to 190°C
  • In a small bowl, take your sugar, garlic and mustard and mix them altogether.
  • In a roasting pan, place your pork and smear the mixture on top of the pork generously ensuring you cover every bit of the pork.

  • Place it in the oven for one and a half hours depending on the size of your meat, mine was a kilo or until the pork is 77°C/177°F using a thermometer.
  • Remove it from the oven and let it rest for at least 15 minutes, then carve your meat, and be ready to indulge.

  22. The pork looks good throughout the entire process from the basting to the final product. The final product served with garlic & herb roasted potatoes looks phenomenal.
