BLT& JALAPENO POPPER GRILLED SANDWICHES

Did anyone say sandwiches?

Hello everyone, I hope you’re all having a great week. I am also doing great and just taking life one day at a time. Sandwiches are the most convenient meals one would have, slap in some filling/ingredients of choice onto two slices of bread and you have yourself a sandwich. Since we are on the subject of sandwiches, I decided to share two delicious varieties: the well-known BLT and a jalapeno popper grilled sandwich. I am partial to the BLT, but I think I was sold once I tried the jalapeno popper one. Both are fabulous sandwiches and you can twist them by adding any other fillings you wish but before that, I would suggest you try this version first and then decide later. For the BLT & jalapeno popper grilled sandwiches, you will need;

Ingredients

  • Thick slices of bread
  • 4 rashes of bacon
  • 1 tsp Olive oil
  • 2 tbsp cream cheese
  • 1 chopped jalapeno or more
  • 1/2 tsp garlic granules
  • 1/4 tsp onion granules
  • Softened butter for spreading
  • Pesto mayo
  • Sliced tomatoes
  • Lettuce leaves iceberg preferably
  • Cheddar cheese slices

METHOD

  • In a preheated pan, fry your bacon rashes until brown and crispy and until some of the fat is rendered.
  • Then chop half of them up into small pieces and set aside.
  • Add your cream cheese, jalapenos, garlic and onion granules and give it a good mix.
  • Butter both slices of bread for the BLT, flip them and spread the pesto mayo, add slices of tomato and rashes of bacon and finally the lettuce slices.
  • Into a preheated pan butter side down and brown them slightly on both sides to avoid soggy lettuce.
  • Once both sides are browned, it’s done and take it of the heat.
  • Butter other slices, flip and spread the jalapeno mixture.
  • Repeat with the jalapeno version only this time you can add a slice of cheese at the end to make it even more creamier.
  • Slice them up serve and enjoy.
TIP: Make sure not to let the BLT brown for too long to avoid getting the lettuce soggy.

How I got here

Blogging is something that I have always wanted to do and it stayed on my mind for quite some time before deciding to just go for it. I read so many posts on how to do it and kept on seeing find a particular niche you will be writing about. Honestly, I love so many things that to focus on only one would be selfish of me, plus just cause I like cooking doesn’t mean everything I make constitutes a recipe.

SWEET & TANGY OVEN-BAKED SPATCHCOCK CHICKEN

Hello Everyone,

I think I can actually agree that I eat too much chicken at this point and need to start venturing out to other meats. Today is all about this scrumptious sweet & tangy oven-baked spatchcock chicken recipe. Very simple and comes out so juicy. The best part is the oven does everything for you and all you have to do is make the sauce, coat and back to the oven it goes. First things first, let’s talk about the prepping of the chicken.

How To Spatchcock A Chicken

  • Take your chicken and place it upside down on your cutting board.
  • The main thing is to cut off the backbone starting from the neck upwards to the tail.
  • You can use kitchen scissors or my go-to a sharp kitchen knife.
  • Once the backbone is out, turn it right side up and gently press the breast bones gently to flatten it out.
  • That’s it and you have a spatchcocked chicken.
