Gosh! It’s been a while since I have come on here. A lot has been happening and all for the better, been cooking lots of food, trying to keep up with all my content and managing with the lockdown. I hope you’ve all been great and are staying safe, I am here today with a recipe that is one of my favourites to make and never disappoints. If you’re a pasta lover and need some inspiration for a great weeknight meal, then this chicken pasta with bacon and spinach in a creamy tomato sauce is definitely for you. I mean what’s not to like? Anything with bacon is a win for me and pair it with a creamy sauce and you’ve knocked it off the park. I was never a pasta lover before and my kids tend to be picky every week but this recipe has changed it all for me.
Ingredients
- 300gms chicken
- 200gms pasta when uncooked
- 4 rashes of bacon
- 3 cloves garlic
- Olive oil (3 teaspoons 1 for each round)
- A knob of butter
- A can of chopped tomatoes
- 240gms bag of spinach
- Salt to taste
- 300mls single cream
- 2 teaspoons cumin ( 1tsp for the chicken and other in tomato and garlic)
- 2 teaspoons paprika (1tsp for the chicken and other in tomato and garlic)
- 1 teaspoon garlic granules
- 1 teaspoon Italian seasoning
- 100gms gouda cheese
- 100gms parmesan cheese
METHOD
- Cut your chicken into bite-sized pieces and into a bowl.
- Add your salt, garlic granules, paprika, cumin, mix it all together and set aside.
- Slice your bacon into smaller pieces and set aside too.
- In a heated pan, add your butter and olive oil and in goes your chicken.
- Make sure to separate them into one layer for them to cook evenly.
- Stir the chicken and wait for them to brown slightly, then remove and put in a bowl.
- Add your olive oil again and it’s time for the bacon, stir for a few minutes and let them brown once again then into the bowl your chicken is in.
- Meanwhile, cook your pasta according to the package and set it aside.
- Last time with olive oil again, in goes your crushed garlic, chopped tomatoes and give it a good stir, make sure to crush any chunky tomatoes.
- Then add some paprika and cumin give it a good stir and let it reduce just a bit.
- Add your bag of spinach, stir to combine.
- Don’t worry your spinach will wilt and that’s fine, continue stirring and let it evaporate a bit.
- Add your Italian seasoning, stir and in with some cream.
- Give it a good stir, once it starts to simmer turn off the heat.
- Add in your cheeses and stir to melt and combine.
- Once all is melted and mixed in well, turn back the heat to medium and add in your chicken and bacon.
- Mix it all in the creamy mixture, and finally, add in your cooked pasta, stir to combine.
- Check your seasoning one more time and that’s it.
- Serve and enjoy.
