Recipe week (Day 2)
Hey there, I hope you enjoyed my day 1 recipe and as promised, I am back with another one. If you like fast, easy and tasty meal ideas, then this will definitely be for you. The best part about this one is anything goes really from your addition of veggies to the dressing, it’s all according to your taste. For my day 1 recipe check out these soft chewy oat biscuits. Now onto today, I give you a creamy tuna pasta salad recipe.
Ingredients
- Pasta
- Salt
- Olive oil
- 1 chopped onion
- 4 Pickles/gherkins
- 2 cans of tuna
- Mayonnaise
- 1 cup thawed peas
- Tsp garlic granules
- Juice of half a lemon
- Chopped coriander
METHOD
- In a cooking pot, boil your water to cook your pasta, and in the water add some salt to taste and a tablespoon of olive oil.
- Once water is boiled, add your pasta and cook your pasta according to packaging.
- Meanwhile, in a small bowl, pour in luke warm water and some salt and in go your chopped onion. This helps to remove the bitterness of the onion.
- In another bowl, mix in your mayo, chopped pickles garlic powder and mix together.
- Drain your onion and rinse a bit then into the mixture, I also added a tablespoon or two of the pickle juice.
- Then in goes your thawed peas and any other vegetable you prefer, juice of the lemon and mix it altogether.
- Once pasta is done, drain and then add it in the mixture and stir it until well combined.
- Then finally, in goes your tuna and give it another good mix, taste to check seasoning and add if needed.
- Finish with some fresh coriander, cover and chill and once your hungry.
- Serve and enjoy.
Note: If you notice, I didn’t tell you the amount of mayo because as I said above it depends on how creamy you like it so you can add or decrease according to your taste. Also you can remove the bitterness of onions by adding vinegar in part of salt and it will work fine too. The amount of pasta will also depend on the number of people you’re feeding.
