I hope you’re all doing great today, last week flew by so fast and this week, my boy turns 6. I can’t believe it but it’s exciting and just nice to see. We ended up having his party this past weekend because schools close this Friday and everyone will be off on holiday so the earlier the better. All in all everything turned out fine and it was a success, shoutout to bakersdays for the best birthday cake. Today’s post is for my foodies out there, Summer is here so lots of outdoor cooking if the weather behaves. Crispy oven-baked chicken wings is the recipe I have for you today and I know you will definitely love them. The best part is you can also grill them if you wish I think I will do that next time. Before I get on with it, stop by here and check out my last post.
Ingredients
- Chicken wings
- Salt
- Pepper
- Baking Powder
- Garlic powder
- Onion Granules
- Paprika
For the Brine
- A litre of water
- 2 tbsp sea salt
- 2tbsp sugar
- 2 lemons sliced
- 5 crushed garlic cloves
- Tbsp mixed herbs
- Tsp coriander seeds
- Chillies to taste (Optional)
- Rosemary a sprig or two
METHOD
- First prepare your brine, in a pan add your brine ingredients and let it come to a boil. I use a shortcut and just pour in boiled water from the kettle then let it simmer for a while.
- Once that’s done, remove from heat and add ice cubes to the mixture to let it arrive at room temperature and add more water, then in go your wings, cover and refrigerate. I left mine to brine for 5 hours but you can leave it as long as you want.
- After 5 hours remove the wings from the brine pat dry and into a bowl they go.
- Now for the spices, a teaspoon each of garlic powder, onion granules, paprika, pepper and salt to taste. Mix them altogether and arrange them on a wired rack.
- Into a preheated oven at 125°C for 30 minutes then 200°C for another 45 minutes.
- Serve and enjoy.
Note: Depending on the amount of wings you have, then you will need to adjust the amount of brine and spices mine was 1.25kg and it worked fine, also you don’t need to have the exact type of herbs like mine, most herbs go really well with chicken. That’s it, some delicious cripsy oven-baked chicken wings for you to try out this summer. You don’t have to have them with potataoes, I had mine with some coleslaw and poured some barbecue sauce on top too and they were glorious. Chicken is a staple in the house. In the summer, I try to use the crockpots as often as possible. The kitchen gets way too hot.

I don’t remember when I last had chicken wings! In Poland they’re not that popular I guess, unless you go to KFC. I’d love to try this recipe out and surprise my friends at the weekend. 🙂

Too bad I no longer eat chicken. I am pescatarian now so only seafood but sometimes I miss chicken but not enough to indulge anymore. This looks like an easy chicken recipe though!

Yummy. Grilling or baking are much better. Calories coming from a grilled chicken wing are definitely a lesser amount than fat laden calories from your fried chicken.
