Another day, another simple recipe for the books. How are you all doing today? I hope all is well. I am also okay dealing with life one day at a time and thankful for everything in general. I decided to share this recipe today due to the fact that I am actually eating one right now and decided why not. So, for today I have for you some dark chocolate chip muffins. Easy to make and simply delicious, below are what you need;
Ingredients
- 125gms all-purpose flour
- 1 tsp baking powder
- 25gms cocoa powder
- 60gms sugar
- 1 medium egg
- 2tbsp oil
- 100mls milk
- 100 gms dark chocolate chips ( use 3/4 for the mixture and leave some to sprinkle at the top before baking)
METHOD
- Preheat your oven to 160°C fan-assisted oven/180°C conventional oven/350°F degrees.
- Into a bowl sift in your flour, baking powder and cocoa powder.
- Add sugar and stir to combine.
- In another bowl beat your egg, milk and oil together.
- Pour your wet mixture into the flour mixture and stir to combine well.
- Add your chocolate chips and gently fold into the mixture.
- Scoop your mixture equally into lined muffin trays.
- Sprinkle more chocolate chips at the top.
- Into the oven for 20 minutes.
- That’s it, once done, place them on a rack to cool.
- Serve and enjoy.
