Recipe week (Day 5)
Finally, we are at the end and it’s day 5. I know I called it recipe week but I don’t want to disturb your weekend with more food posts and so opted to stop today and I hope that’s fine with all of you, besides I want to write different posts for a while then come back with another recipe week since I still have more I haven’t published yet. If you don’t follow my blog yet then you have missed a lot so stop by day 1, 2, 3 and 4 before continuing to this one. So to finish off my list of recipes, I am happy to share with you this quick and easy curried vegetable rice.
Ingredients
- 2 Cups rice
- 2 tbsp Olive oil
- 1 Chopped onion
- 4 Cloves crushed garlic
- Garam masala
- Curry powder
- Turmeric
- Coriander
- Tomato paste
- Cumin
- Salt to taste
- Mixed frozen veggies
- 4 Cups hot water
METHOD
- In a hot pot, add your olive oil then onions and garlic and sweat them for 2 to 3 minutes.
- Meanwhile wash your rice until it runs clear and removes all the starch.
- Once onions are ready add a tsp each of garam masala, cumin, coriander, turmeric, curry powder and cumin and stir until well combined.
- Add a tablespoon of tomato paste stir and then in go your thawed veggies and stir once again.
- Check for seasoning and add salt to taste and now add your rice and stir once again.
- Pour in your water, stir, reduce heat and then cover..
- Stir once again to combine the veggies with the rice and cook until all water is absorbed, taste to check if rice is done.
- Serve and enjoy.
Note: I used basmati rice which I have tried before but depending on your type or brand of rice, some cook differently so know your rice brand and get one that doesn’t turn out starchy, the rule still remains for every one cup of rice add 2 cups of water, I also use hot water to save time. I make something very similar. We call it fried rice back home. I also do same with quinoa or brown rice as I rarely eat white rice except when making jollof.

I prefer brown rice above basmati myself.
I love vegetable rice..even more when it is curried. That way, it’s tasty enough for me. This dish is largely my go-to for most lunches.

Vegetable rice is a balanced meal. Cook the rice in a rice pot. It is easy and fast to prepare this dish.
