EASY NO MAYO BABY POTATO SALAD

When it comes to salads, there are so many varieties out there but I am partial to a potato salad once in a while, I like it both ways creamy or not. I think I just love potatoes in general and having a salad with them just makes me happy. Today I have an easy no mayo baby potato salad to share with you and I hope you will like it. For this recipe, you will need;

Ingredients

  • 1Kg baby potatoes
  • 2 tbsp of salt in potato water
  • 2 small onions chopped
  • A handful of coriander/ parsley
  • Enough cold water to cover the potatoes

For The Dressing

  • 4 tbsp Olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp distilled vinegar
  • Juice of half a lemon
  • 1/2 tsp Dijon mustard
  • 2 cloves garlic crushed
  • Salt to taste
  • Black pepper to taste

METHOD

  • In a stove pot, place your washed baby potatoes, salt and water to cover.
  • Let it boil until the potatoes are just tender.
  • In a bowl, add your olive oil, vinegar, garlic and lemon and whisk until well combined.
  • Then add in your mustard, mixed herbs and black pepper whisk once again, check the seasoning and add salt if necessary and set aside.
  • Peel and chop your onions into crescent shapes.
  • Once the potatoes are done, chop them into halves and into a bowl.
  • Pour in your dressing while they are still warm and your potatoes and give them a good toss. Then go with your coriander/parsley.
  • Toss once again, cover and let the flavours do their magic.
  • Finally, after 30 minutes to 1 hour, serve and enjoy.
  • You can eat them warm or at room temperature.

TIP: To make it even more delicious, try making this ahead of time and let it stay with the dressing to enhance the flavours more. The more it sits the flavourful it gets. Also adding bits of bacon makes it even better and to add a bit of colour, swap the white onions for red ones.
