I hope you’re all doing great and all is just fine. It’s been a minute since I’ve been on here but what can I say, life happens. I have been struggling to get back to writing and as much as I tell myself to just start, something comes up and I end up entering my procrastinating stage which makes me cancel everything. Anyway, thanks to Pinterest, I overcame that today and just made myself do it. I don’t know about you but the heatwave these past week has been horrendous, I mean I hate the cold but I expected it to be slightly warmer and not scorching. Thankfully this fresh homemade strawberry & mint lemonade got us through some of it. Simply refreshing, can be made in advance and sorry to say this but it doesn’t last long, so make double. For this lemonade you will need;
Ingredients
- 2 cups strawberries chopped
- 1 1/2 cups lemon juice (roughly 8-9 lemons)
- 1 cup sugar and more for the strawberries
- 3 tbs sugar for the strawberries
- 2 cups water for syrup
- 4 cups cold water
- a bunch of mint leaves
- Ice cubes to serve
- Strawberry slices and lemon for garnish
METHOD
- Add your strawberries and 2 tbsp of sugar in a bowl then mash with a fork to release the juices and set aside.
- In a saucepan, add your water and the cup of sugar then onto moderate heat to let the sugar dissolve.
- Once dissolved, add your mint leaves and let them steep as it cools.
- Pour your strawberries into a blender and give them a good blitz until well blended.
- Then strain using a fine sieve to remove the remaining seeds.
- Pour your lemon juice into the strawberry puree and give it a good stir.
- Now add your water and the minty syrup and stir once again, check for sweetness and into a jug to chill.
- Pour in glasses or jars with some ice, sliced strawberries and some mint leaves for garnish.
- Serve and enjoy.

It looks so delicious and refreshing, we are having a lot of rain where i live and i should probably drink some tea, but im going to spoil myself with some lemonade
