HEALTHY OATMEAL PANCAKES

If you’re a breakfast person and are looking for a go-to filling breakfast, then these healthy oatmeal pancakes are the ones for you. How are you all doing by the way? I hope all is well and are still staying safe, today I am back with a breakfast recipe for you. I first made them when I told myself I was on a diet for like the millionth time and needed breakfast to keep me going for longer and handle my hunger during workouts.

The best part about these is that they are fun to make and if you have little ones who can help you, then they will love these. Not your typical shape since as much as you try to form a perfect circle, they go their own direction and as my mum said “butterfly pancakes” but the taste is worth it. Also once you make the mixture, you will think that it’s either too runny but don’t worry they turn out great. For this recipe, you will need;

HEALTHY OATMEAL PANCAKES

Ingredients

  • 2/3 cup oats 
  • 2/3 cup all-purpose flour 
  • 2 tbs sugar 
  • 2 eggs 
  • 1 tsp vanilla extract 
  • A tsp cinnamon 
  • 1/4 tsp salt 
  • 11/2 tsp baking powder 
  • 2 teaspoons melted butter 
  • 1 cup milk 
  • 1/4 cup warm milk

METHOD

  • Soak your oatmeal in a bowl with warm milk, mix and set aside.
  • In another bowl, add your flour, sugar, baking powder, salt and cinnamon. Give it a mix and set it aside once again.
  • Beat your eggs and melted butter, add vanilla extract, milk and mix.
  • Now add your oat mixture into the egg mixture and combine.
  • Pour your wet mixture to the dry and give it a good whisk using a handheld whisk.
  • Start frying them, using a nonstick pan and no oil is required.
  • Pour a cup or middle amount on the centre and wait for bubbles to form before flipping.
  • Make sure to brown both sides and continue with the rest.
  • Once done, onto a plate.
  • Serve and enjoy.
