I hope you all had a great weekend. I am just excited for schools to close and just have a bit of rest from doing school runs. Anyway today I am back with another post and it’s going to be a lentil coconut curry recipe. If you love lentils and need a way of making them more flavourful, then this one will definitely make you excited to include them in your meal plans for any day of the week. Also if you missed my previous posts, check out how to change your life and some gift guides before it’s too late. For the recipe, you will need;
Ingredients
- 2 cans of lentils
- 2 tbs Olive oil
- A chopped onion
- Thumb of ginger crushed
- 3 Cloves garlic
- Cumin
- Coriander
- Garam Masala
- Curry Powder
- Tandoori Powder
- Turmeric
- Paprika
- A stock cube
- 2 tbs tomato paste
- A can of chopped tomatoes
- 1/2 tsp sugar
- Water
- Salt to taste
- A can of coconut milk
- Chopped coriander leaves
METHOD
- Pour out your 2 cans of lentils and give them a rinse under a sieve.
- Heat up your oil in a preheated pot and add your onions, garlic and ginger and sweat them for 5 minutes.
- Then add a teaspoon each of coriander powder, garam masala, turmeric, tandoori powder, cumin and curry powder.
- Give them a stir and then add a teaspoon of paprika, tomato paste and your stock cube.
- After 3 minutes, add your can of chopped tomatoes and let it cook until slightly thickened and add your sugar to cut acidity from the tomatoes.
- Then add you lentils and give them a good stir and add a cup of water to cover them slightly and season with salt to taste.
- Once it’s simmered for 5 minutes, add your coconut milk, stir and cover to simmer for 10 to 15 minutes on low heat.
- Finish with your coriander leaves and you’re done.
- Serve and enjoy.

Oh i love that combo. I will try out this recipe this weekend. I tried adding coconut milk into chicken curry, i liked the flavour, it had a distinctive taste.
Yes it does it can be sweet at tomes but add lime to cut if off.
