Recipe week 3 (Day 2)
Today is all about some beef and broccoli which brings you to my recipe for Mongolian beef and broccoli. I tried this before and after a few failed attempts I ended up with this perfection of a meal. It’s super flavourful, easy to prepare and turns out great all the time. I hope you do like it and get to try it out and do stop by day 1 for a lovely apple tart dessert. For this recipe you will need:
Ingredients
- 600 gms beef strips
- A head of broccoli
- Cornstarch
- 4 spring onions chopped
- 4-5 cloves Garlic crushed
- Thumb of ginger crushed
- 1 cup low sodium soy sauce
- 3 teaspoons of sugar to taste
- 1/2 a cup of water
- 2 tbs of olive oil
METHOD
- Place your strips in a bowl with 2 tbs of cornstarch and mix together to coat the meat well and you can add more if you need to.
- Meanwhile, cut your broccoli into florets and into hot water to blanch them for 5 to 7 minutes.
- Once done, drain and set aside.
- In another bowl, mix your soy sauce, sugar and another tbs of cornstarch.
- In a heated pan, add 2 tbs of a tbs of olive oil and starting frying up your beef strips making sure not to over crowd the pan.
- I did mine in two takes, removing the first batch and doing the second one.
- Once meat is browned and set aside, add another tbs of olive oil and in with your garlic and ginger.
- Fry them up for 2 to 3 minutes then add in your beef strips plus the juices too.
- Stir them up altogether to fry up a bit with the garlic and ginger, then pour in your soy sauce mixture.
- Give it a stir and it will thicken after a while, depending on how saucy you want it, you can leave it to reduce more or not.
- Finally add in your broccoli, stir it up and then your spring onions too.
- Give it a quick stir once again to warm it all and that’s it.
- Serve it up on a bed of rice and enjoy.
