Recipe week (Day 2)
As promised, I am back with another recipe for you and if you’re new here, hello and welcome to my site. Do check out my buttermilk fried chicken sandwich first then come back and join me. I hope you all had a great Easter and as much as it was mostly indoors for most of us, I am sure it treated you well. For today’s post, it’s all about one pot wonders and this one is great if you’re not really in the mood of thinking of what to prepare and it’s also perfect to include in your meal planning. This is my one pot chicken and rice recipe, for this you will need;
Ingredients
- A cup rice
- 400gms cubed chicken
- 2 tbsp olive oil
- A cup frozen veggies
- 2 1/2 cups of chicken stock
- An onion
- 4 cloves garlic crushed
- A thumb of ginger grated
- Cumin
- Paprika
- Garam masala
- Coriander
- Curry powder
- Turmeric
- Tomato Paste
- Salt to taste
- Pepper
- Coriander leaves
METHOD
- In a preheated pan, add your olive oil, chopped onions, garlic and ginger. Sweat them for 3 to 4 minutes.
- Then season with some salt and pepper before adding in your cubed chicken and give it a stir for another few minutes.
- Add a tsp each of cumin, paprika, garam masala, coriander and curry powder and turmeric. Give it a good stir.
- Once all combined, add your frozen veggies mix it all up and then in with a tablespoon of tomato paste and stir once again.
- Add your washed rice and combine altogether then in with your stock, stir once again and cover on low heat to do it’s magic.
- Do check it once it comes to a boil and give it a stir but not too much or else the rice will go mushy. Cover once again and let it reduce.
- Check for seasoning and adjust to your liking, finish off with coriander leaves and you’re done.
- Serve and enjoy.
Note: I always say 2 cups of water for every one cup of rice but not all rice is the same hence me adding more. Depending on what type of rice you’re using just know how it cooks if you’ve used it before. Also the chicken stock is optional and water does work well too. If you do use chicken stock, check your seasoning since stock does tend to be salty if not homemade, also you can use thawed veggies if you want to since it doesn’t really make a difference.
There you go, a delicious one pot and chicken recipe. See, it wasn’t that bad right? Well hopefully. All your recipes look so yummy. What would be your recommendation for someone who does not like spicy food at all?
If you don’t like spicy, you could omit some spices but this meal isn’t that spicy since my kids can eat it, they just add flavour with no heat at all.
I like delicious and easy to prepare meals. This one pot chicken and rice recipe is great. I am sure this will be another winner with the family! I am making this on Friday. Thank you for the recipe!

It’s like an Indian take on Jambalaya! Love all those spices and red based sauce! Though I may have to add a little more heat with some crushed red pepper flakes or something like that!
