ONE POT HOMEMADE BEEF AND VEGETABLE STEW

I hope you all had a great one and are starting of this week feeling more energised. I got to spend mine indoors due to the rainy weather but let’s just say it was time well spent. If you missed my last post, do drop by here and check it out. Today, I have another lovely post for you guys and it’s all about my one pot homemade beef and vegetable stew, delicious, spicy and so comforting. If you’re anything like me then cold weather requires a nice bowl of beef stew with a side of mashed potatoes. For this recipe, you will need;

ONE POT HOMEMADE BEEF AND VEGETABLE STEW

Ingredients

  • 2 Tbsp Olive oil
  • 500 gms diced beef
  • 1 Onion chopped
  • 3 Crushed garlic cloves
  • A thumb of ginger grated
  • 1/2 a tsp Turmeric, cumin, garam masala
  • 1 stock cube
  • Salt to taste
  • 2 squeezes of tomato paste
  • 1 tsp Curry powder
  • 1/2 tsp Paprika
  • 1 to 2 cups Frozen vegetables
  • A Tbsp flour (optional)
  • Water to cover
  • 1/2 a bunch chopped Coriander

METHOD

  • In a heated pot, pour in your olive oil then in go your cubed meat to brown evenly.
  • Once evenly browned, in go your onions, garlic and ginger and give it a stir.
  • Make sure to sweat down the onions a little bit before coming in with your spices, stock cube, curry powder, tomato paste and paprika.
  • Then stir very well and ensure that all the spices have mixed in well with the meat. Also make sure to watch your heat and that it’s not too high.
  • Then in go your frozen veggies and stir once again.
  • Once your veggies have thawed well in the meat, add in your flour and stir it once again. This is to thicken your stew up.
  • Add in your water to just cover the meat slightly, stir and cover for it to reduce a while.
  • After a few minutes, add salt to taste and cover once again to simmer until it’s reduced even more to a nice thick delicious stew.
  • As always, finish with your chopped coriander, stir and you’re done.
  • Serve and enjoy.

ONE POT HOMEMADE BEEF AND VEGETABLE STEW

Note: You don’t need to add the flour if you don’t want a thick stew and as for your veggies, you can use fresh if you have the time. I think the carrots would definitely take longer to cook. You can also reduce on the spices but why would you? It’s so delicious as it is. Serve with some mashed potatoes or rice  on the side and you are good to go.
