OVEN-BAKED HONEY SOY CHICKEN

Hello Lovely People,

I hope you are all doing great and having a great week so far, another week calls for another recipe and let me just tell you this one is a keeper. A delicious oven-baked honey soy chicken recipe is what I have for you today, now I just have to confess that I have tried similar chicken recipes before but always ended up with blackened meat and not well cooked inside. After many trial and errors, I found the right way to cook these and they turned out perfect. I did end up marinating my chicken for 3 hours but I do know there are times when you just don’t have all that time, so I would suggest a minimum of 30 minutes when it comes to marinating and it will still hold on to the flavours and turn out great. All you’ll need;

OVEN-BAKED HONEY SOY CHICKEN

Ingredients

  • 1 kg chicken thighs and drumsticks
  • 3 tbsp light soy sauce
  • 2 tbsp oyster sauce
  • 4 cloves of garlic crushed
  • A thumb of ginger grated
  • 2 tablespoons of honey
  • 1/2 tsp salt
  • 1 tsp white/ black pepper
  • 1 tsp olive oil ( You can use sesame oil if you have)
  • Sesame seeds for garnish

METHOD

  • Take your chicken and cut slits for the marinade to penetrate through and place them in a bowl.
  • In another bowl add your soy sauce, oyster sauce, garlic, ginger, honey, salt, pepper and give it a good mix.
  • Pour the mixture into the bowl with the chicken and ensure that it is well coated then cover it with some cling film and into the fridge for some marination.
  • Depending on how long you have you can leave it for 30 minutes, 3 hours or even overnight to make the flavours to be more intense.
  • Make sure to remove the chicken an hour before cooking to make it come to room temperature before baking it.
  •  Preheat your oven to 180°C fan assisted/ 200°C/ 400°F then place your chicken in a baking tray and keep the remaining marinade.
  • Cover with foil and into the oven for 40 minutes.
  • Remove from the oven and baste with the remaining marinade and back into the oven this time uncovered for 30 minutes.
  • Remember that drumsticks cook faster than thighs so you would have to watch them not to burn.
  • Check whether they are done by pricking the centre and making sure no pink juices run through.
  • When ready remove from oven, get your choice of accompaniment either potatoes, bhajia, curried rice or salsa.
  • Serve, garnish and enjoy

OVEN-BAKED HONEY SOY CHICKEN

NOTE: I chose to bake them but you can also grill them if you want a more barbecue effect, all in all, you will still get the same results. Also due to the honey, the skin will turn a bit black so don’t freak out it will still taste heavenly but just keep an eye on them.
