Recipe week (Day 3)
I hope you’re all enjoying my recipes and aren’t getting tired of seeing them because guess what? We are on day 3 and this roasted spatchcock chicken in yoghurt marinade is a show stopper and worth it. Before we get started, do drop by here and here incase you missed my other two recipes this week. All you need to do with this is have a little bit of prep and the oven does the rest for you, I bet that sounds good now. So onto the recipe, you will need;
Ingredients
- A whole spatchcock chicken
- 200mls Greek yoghurt
- 1 Chopped onion
- 3 Garlic cloves crushed
- A thumb of ginger crushed
- Tbsp Paprika
- Mixed herbs
- Salt to taste
- Juice of half a lemon
METHOD
- In a bowl, mix together your yoghurt, onion, garlic, ginger, paprika, salt, lemon juice and mixed herbs.
- Then in a dish, place your chicken and rub the yoghurt mixture all over it, cover and refrigerate to marinate.
- The longer the better, mine stayed for 4 hours then removed it one hour before roasting to come to room temperature.
- Once you’re ready, preheat your oven to 180°C
- Transfer your chicken into a roasting pan and into the oven for 1 and half hours.
- You can use a thermometer to check if it’s ready or if you poke it and the juice runs clear then it’s good.
- Baste your chicken the last half hour with it’s juices and once it’s done.
- Let it rest then carve it.
- Serve and enjoy.
Note: I did spatchcock my chicken but they are readily available in stores or you can tell your butcher to do it for you. Also depending on the size of your chicken, you will have to increase the time of cooking and the marinade amount or decrease it, either way it will turn out great.

Not at all it ends up tenderising it at the end and makes it very juicy.

I make chicken often but never tried to marinate it in yogurt. It looks delicious and I will try it this weekend !

I have not tried marinating chicken in yogurt so this is something new to me. I will have to try this recipe. It looks like it will be another family favorite chicken dish!

Interesting recipe in the sense how would yoghurt marinade taste like. I never had it before, so I try this recipe to figure out the taste.
It actually helps to tenderize the chicken and you don’t really get a strong taste.

I will definitely try this recipe this weekend! I love the idea of tenderizing without an overpowering flavor. And anything with ginger and garlic, I’m sold.
