When it comes to breakfast, let’s just say it’s a hit or miss in my household. It’s either a yes or a no and mostly it’s been a NO for a while now. As much as I know it might be the most important meal of the day, my family is way different and we just don’t have breakfast. This recipe came about after I tried all kinds of meals from sandwiches to pancakes and even cereal but the only time my kids ate something was if it was a cereal bar or munching on this homemade granola, I know, sounds wrong but I had to give it a try. Today I have this simple homemade granola recipe for you. You will need;
Ingredients
- 3 Cups rolled oats
- 1/4 cup brown sugar
- 1/2 a cup honey
- 1/4 cup vegetable oil
- 1/2 a cup roughly chopped almonds
- A handful of raisins
- 1/2 a tsp cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
METHOD
- In a saucepan, add sugar, honey, and vegetable oil.
- In a bowl, add the oats, roughly chopped almonds, cinnamon and salt and give it a good mix.
- Melt your sugar mixture on moderate heat until it dissolves.
- Meanwhile, preheat your oven to 150°C fan assisted oven/170°C conventional oven/340°F
- Once dissolved, remove from heat add in your vanilla extract and stir it.
- Pour into the oat mixture and mix until well combined.
- Pour the mixture into a lined baking tray and spread evenly.
- Into the oven for 30-40 minutes tossing after every ten minutes.
- Leave it to cool completely, then break into chunks.
- Add some raisins and gently mix.
- Keep in a jar for future use or serve immediately with some yoghurt or milk.
- Enjoy.
