Recipe week 3 (Day 4)
Guess who? Yes, it’s me again and the week is almost over. We are on day 4 and I am super proud to have been able to do this. Anyway how are you all doing today? I hope all is ok and you’re all getting on just fine. The heat is apparently starting to check in and today was not that comfortable, I mean I do like warmth but not scorching if you know what I mean. I thought tomorrow would be better but apparently it’s going to be even higher than today, I guess outdoor cooling activities are in order. If you remember a while ago, banana bread was everywhere and I don’t know why but I also jumped on that wagon and made this simple perfect moist banana bread. Hence the recipe for today, you will need;
Ingredients
- 4 very ripe bananas
- An egg
- 11/2 cups all-purpose flour
- A tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 cup melted butter
- 3/4 cup sugar
- 1 tsp cinnamon
- 1/8 tsp salt
METHOD
- Pre-heat your oven to 350°F/ 176°C
- In a bowl, mash your bananas using a fork until all evenly mashed.
- Then add your melted butter give it a mix then in with your sugar and mix it altogether once again.
- Add your one egg beaten of course, then your vanilla extract and mix.
- In another bowl mix your flour, baking soda and baking powder, add salt and cinnamon which gives it great flavour.
- Take your wet mixture and add half of it into your dry ingredients making sure to mix it well before adding in the rest.
- Make sure that there are no flour lumps and all is perfectly mixed.
- Into your loaf tin or any baking tray you have chosen.
- Into the oven for 55 minutes.
- Let it cool in the tin for 10 minutes, then onto a rack to cool further.
- Slice it up, serve and enjoy.

Banana bread is one of my favourites. I also use cinnamon in mine it really does make a difference to the flavour.

This is lovely. I’m no baker at all but I’ve used almond flour, replaced egg with flax egg and added some apple cider for lift and it came out so light. More like a loaf cake, which I love.
