SIMPLE SPICY ROASTED TANDOORI CHICKEN

Hello everyone, can you believe it’s April already? March flew by real fast. I hope you are all doing great today and your monthly goals are right on track. I am doing great and have been busy planning for new blog posts and trying to figure out a good schedule to follow. Today I have a delicious simple spicy roasted tandoori chicken recipe for you and I am sure you will love it, the best part is that it’s so simple to follow that anyone can make it. You will need;

SIMPLE SPICY ROASTED TANDOORI CHICKEN

Ingredients

  • A whole chicken
  • A lemon cut in half
  • 2 sprigs of rosemary
  • Salt
  • Black pepper
  • 1 Tbsp softened butter
  • A tbsp tandoori powder

For the brine

  • A litre of water
  • 2  sliced lemons
  • Crushed garlic cloves
  • 2 tbsp salt
  • 1 tbsp sugar
  • 1 tbsp Black peppercorns
  • Sprig of thyme or bay leaf

METHOD

  • First things first, you need to brine your chicken, bring half the water to a boil with all the brine ingredients, then off the stove and add the rest of the water to cool it off a bit, let it come to room temperature before covering your chicken with the solution.
  • Make sure your chicken is covered fully then refrigerate, it not only makes it tasty but you end up with a juicy chicken which you will love. Best to let it stay in the brine for 4-24hrs
  • Preheat your oven to 170ºC, remove chicken from brine, pat dry and place it in a roasting dish.
  • Cut your lemon in half and stuff them into the chicken’s cavity with the rosemary, close it up using a cocktail stick to keep them from falling out.
  • Then take your softened butter and smear it all over the chicken, rub it all over ensuring you cover all of it.
  • Then sprinkle your tandoori powder all over, and season with salt and pepper to taste.
  • Into the oven it goes for 1 and a half hours depending on the size of your chicken, mine was 1.3kg.
  • Once it’s done, remove from the oven let it rest and carve.
  • Serve and enjoy.

SIMPLE TASTY ROASTED TANDOORI CHICKEN

Note: The amount of the brine depends on the size of your chicken and so does the cooking time as I said above. If your chicken is bigger, then double the brine measurements. Also you notice I said thyme or a bay leaf because it’s definitely what you like, other herbs work too, add in parsley, coriander rosemary and they will work fine.
