SLOW COOKED DRY RUBBED PULLED PORK SANDWICHES

Recipe week (Day 6)

Finally we made it to the end, I would have finished with one more tomorrow but we all need some rest on a Sunday so I am giving myself some. I hope you’re all doing great and still hanging on with all these isolation and staying home. Today’s recipe is something you can have tomorrow since it involves the oven doing most of the work for you and you just have to finish it off by assembling. Who doesn’t love pulled pork? I know I do and that’s why my last recipe for this week goes to my slow cooked dry rubbed pulled pork sandwiches. For this you will need;

SLOW COOKED DRY RUBBED PULLED PORK SANDWICHES

Ingredients

  • Sugar
  • Garlic powder
  • Onion powder
  • Salt
  • Paprika
  • Cumin 
  • Mustard powder
  • Black pepper
  • Buns
  • 3 Onions
  • Barbecue sauce
  • A glass of water

METHOD

  • Preheat your oven to 180°C and prepare the rub.
  • Mix your dry rub together a tablespoon of all the spices, salt and 1/2 a tablespoon of mustard, then set aside.
  • Then slice your onions into quarters in a way that the pork can sit on top without sliding.
  • Take your pork joint and cover it with the rub liberally, if some remain set aside since it may dissolve a bit while resting and you could add the rest before putting it in the oven.
  • Place your onions at the bottom of your dish or pot depending on what you’re cooking it in.
  • Then take your pork and place it on top of the onions to sit on top and kind of not touch the bottom of the dish. 
  • Pour in a glass of water on the side and not on top of the meat, cover it up with aluminium foil or dish cover.
  • Into the oven for 3 and half hours
  • Half way through, remove from the oven and add 2-4 tablespoons of barbecue sauce depending on how sweet you like your meat and baste it with the juices it produced.
  • Cook it uncovered for the last hour, then remove from oven cut string and remove excess fat.
  • Using two forks, shred your meat and since it’s tender it will be very easy to do so.
  • Remove excess fat from the remaining liquid and add in your shredded pork meat.
  • Prep your buns, add your meat and some hot sauce on top or if you like some crunch add some coleslaw too.
  • Serve and enjoy.

Preheat your oven to 180°C

That’s it my final recipe for the week, slow cooked dry rubbed pulled pork sandwiches. Wow, I’m actually proud of myself for pulling through with all the children screams in between writing.   1. I completely understand when you mentioned pulling this off with children around and other household chores on your plate. The recipe does sound easy but time consuming since pork might take sometime to cook.
