SLOW ROASTED GARLIC AND ROSEMARY SHOULDER OF LAMB

The weekend is already here once again and I can’t believe it. This week has flown by so fast and I am not complaining. Next week is half-term for my boy so that makes this weekend even sweeter. Anyway, how was your Valentines day? Did you do anything interesting? Used any of my ideas? I hope you all had a great one and got to spend it just as you wanted. Today I have the simplest throw in the oven recipe that you will definitely love, it’s my slow roasted garlic and rosemary shoulder of lamb.

SLOW ROASTED GARLIC AND ROSEMARY SHOULDER OF LAMB

Ingredients

  • 1.5 Kg Shoulder of Lamb
  • Garlic cloves
  • 4 Rosemary sprigs
  • Salt
  • Pepper

METHOD

  • Preheat oven to 150°C.
  • Then in a baking dish, place your shoulder of lamb and pat dry to remove excess water from the packaging.
  • Then season well with salt and pepper and set aside.
  • Peel and cut your garlic cloves into tiny wedges
  • Take your rosemary sprigs and place some under the meat then with your knife, poke holes all over the meat but don’t go too crazy. Just according to the number of garlic wedges you have.
  • Take your garlic and stuff them in the holes and make them to enter through.
  • Then with the remaining rosemary, cut them to be smaller and also stuff them in the holes with the garlic.
  • Then cover with foil paper and into the oven for 3 hours.
  • After 3 hours, remove the foil and let it continue roasting for the last hour.
  • Let it rest, carve, serve and enjoy with some potatoes or salad.

Note: Depending on the size of your meat, then you will have to adjust the time accordingly also if you like pouring some water or stock under your meat while roasting, then it’s totally fine I just didn’t want to do it this time and it’s okay. You can add any other spices you wish too I just like having it simple sometimes, plus it’s so tender that you don’t need anything really.

There you go, didn’t I tell you it was simple, I hope you do get to try it and tell me how it turned out. Also if you don’t like lamb it’s fine but you are really missing out with this recipe. I`ve never really eaten lamb or any other kind of sheep meat so I want my first experience to be a good one.
