Hello Everyone,
I hope you all had a good weekend and enjoyed the rain that poured all through it. If you’ve been reading or following my blog, then you already know that I have a Youtube channel mainly based on my homecooked meals and still related to my blog. Due to not being able to keep up with the posting and recording, I have decided to do something different and give you all my recipes this week. So yes I will be bombarding you with a delicious recipe everyday until I come up with others. I hope you do like this idea and I am going to start you off with these soft chewy oat biscuits.
Ingredients
- 125gms Oats
- 120gms Flour
- 125gms Softened Butter
- 90gms Sugar
- 11/4 tsp Baking powder
- An egg
- Tsp Vanilla extract
METHOD
- Preheat oven to 175°C
- In a clean bowl, mix in your oats, flour, sugar and baking powder.
- Then in goes your butter and rub it in, best use your fingers for this really helps you feel the texture.
- Once that’s done beat your egg and add it in the mixure with the vanilla extract and mix it altogether.
- The mixture should not be overly watery and not too thick, it should be able to be moulded or scooped.
- Using an ice cream scoop or spoon, divide your mixture onto a tray lined with parchment paper, making sure to space them out since they will expand.
- Into the oven for 15 to 20 minutes
- Once out let them cool on a rack
- Serve and enjoy
Note: Depending on the size of your scoop, it can make more or less and if you want more all you have to do is double the recipe. Also if you want to change it up a bit, you can add shredded coconut by just halfing the flour and the other half to be the coconut.
That’s it a simple delicious recipe for soft chewy oat biscuits. These will definitely not stay long and if they do then you are really lucky. Oats are so healthy and I’m always taking them during most breakfasts. They can be filling and so yummy. I should try some oat biscuits. They look so soft and delicious!

You had me at soft and chewy! I love a good biscuit but I don’t like anything brittle or crunchy!
For someone that’s clueless with flour, these look easy to do. Only thing is that I don’t eat eggs and I wonder if substitutes would affect consistency. I’ll try a small test batch. They look delish.
