When I think of this Kenyan chips masala recipe, It takes me back home and reminds me of my college days and how much I used to stuff myself with them. If you’ve been following my blog for a while now, then you know I am Kenyan and I love sharing my Kenyan recipes with you and most of you seem to like them. From my samosas, chapatis, beef pilau, mandazis and kachumbari. Chips masala/ masala chips whichever way you say it, makes no difference. I still crave them from time to time and making them at home is even more satisfying. If you try this recipe, please don’t come and complain to me that you can’t stop having them because they are that good. Perfectly spiced fries with a touch of lemon for good measure, for this recipe you will need;
Ingredients
- Cooked fries
- One small onion chopped
- 3 Garlic cloves crushed
- A tsp of garlic granules
- Thumb-sized ginger grated
- A tbs olive oil
- Tsp coriander powder
- 1/2 tsp cumin
- Tsp garam masala
- A tablespoon of tomato paste
- 3 tbsp tomato sauce/ crushed tomatoes
- 3 tbsp lemon juice
- Water to loosen the mixture
- Salt and pepper to taste
- A tsp sweet chilli sauce
- Tbsp sriracha sauce
- Crushed chillies to taste
- Chopped coriander leaves to finish off and garnish
METHOD
- Firstly, bake/ deep fry your fries whichever way you want is fine. I baked mine to avoid excess oil.
- Heat some oil in a pan and saute your onions, garlic and ginger.
- Then add your garlic granules, coriander, cumin and garam masala and give it a good stir.
- The in goes your tomato paste, and tomato sauce and give it a good mix once again.
- Follow up with your sweet chilli sauce, sriracha and some lemon juice.
- Add a bit of water to loosen it a bit then season with salt and pepper to taste.
- Add some chilli flakes and a bit of water if necessary depending on the thickness.
- Finish up with chopped coriander and finally toss in your cooked fries and mix gently to coat evenly.
- Serve up, garnish with more coriander and enjoy.
