SWEET & SOUR PINEAPPLE PORK MEATBALLS

Happy new week, I hope you had a fabulous weekend. I am back again with a delicious recipe for you and these sweet & sour pineapple pork meatballs will definitely make you salivate. You can have them with some rice or any other side, it’s your choice. Also you can modify it in any way you wish and it will still turn out fab. You will need,

SWEET & SOUR PINEAPPLE PORK MEATBALLS

Ingredients

  • 500 gms minced pork
  • Salt & Pepper to taste
  • 1 tsp Allspice powder
  • 1 tsp Garlic granules
  • 40 gms breadcrumbs
  •  Light soy sauce
  • 1 Tbs Balsamic vinegar
  • 1 Can of chopped pineapples with juice
  • Juice of half a lemon
  • 2 Squidges Ketchup
  • Spring onions
  • 3 Garlic cloves crushed
  • 2 Onions chopped
  • 1 Tbs cornstarch
  • 2 Tsp brown sugar
  • 1/4 glass of water

METHOD

  • In a clean bowl, mix together your pork mince, breadcrumbs, allspice, garlic granules, 2 tbs light soy sauce, salt and pepper. Then form bite-sized balls, cover and let them marinate for a while.
  • In a heated pan, pour your olive oil and place your meatballs in one layer make sure not to overcrowd, let them brown slightly by turning the around. Once browned, remove from the pan and set aside.
  • Then in go your onions and crushed garlic, sweat them for two to three minutes.
  • Then pour in your balsamic vinegar, 2 squidges of ketchup, half can of chopped pineapples and 1/2 of the juice. Combine well together and let it simmer for 5 minutes.
  • Then take your water, mix in the cornstarch, brown sugar, another 50mls light soy sauce, and the rest of the pineapple juice.
  • Pour your mixture in the pan and then put back in your meatballs and let them simmer until slightly reduced and thickened to your liking, pour in your lemon juice, season more if necessary.
  • Serve with some rice and garnish with chopped spring onions and chillies.
  • Enjoy.

Note: My family doesn’t like peppers except me, hence the lack of but if you prefer more veggies then bell peppers work very well. Also when it comes to the pineapple, you don’t have to put all of it, change it to your own liking and taste. If you think it’s too sweet then omit the sugar or the rest of the juice, if it’s too tart then you just add more sweetness.

    1. Just started keto too but doing the keto on steroids for dr.Berg . No dairy, only fatty meats and 67-75gms fat per day plus its zero carbs not counting the veggies. I made this for my family but had the pork on its own.

  5. I am not a big fan of cooking and neither am I good at it. But then my doctor said that I should start cooking myself and should avoid outside food. This recipe looks like a lot of fun I am going to give it a shot

  6. The sauce of this recipe sounds so delicious. I do like sweet and sour together. I would probably leave out the sugar though, I think the pineapple juice is sweet enough.
