Quesadillas are on my mind today and not just simple ones but beans and sweetcorn quesadillas, perfectly spiced, full of flavour and can be whipped up real quick. I ended up refrying my own beans but if you have a favourite brand then you can use that. I usually like my beans to have a bit more texture, not thoroughly mashed and to have a bite too.
