Hi there

I hope everyone is having a great start of the week, as for my post today it’s all about chicken. Who doesn’t love a good chicken roast? I know I do. When I used to make roasted chicken, it used to have a mind of its own and either overcook or just turn out wrong but after multiple tries, I finally found my way of making the tastiest chicken and the best part is, the oven does all the work for you. This is my tasty roasted chicken recipe.

DAIRY FREE ZUCCHINI VANILLA CUPCAKE RECIPE

dairy free zucchini vanilla cupcake recipe

Hi guys,

I hope your week is going on just fine. This week I decided to revisit a recipe I used to make but then kind of neglected it for a while. As I had said before in my other post here, my son is allergic to milk and we thought it would have disappeared once he turned 2 then three and now he is almost four but clearly it’s just chilling on the side lines saying “Am still here” and will not disappear anytime soon. I found this recipe that my son loves from the cook yourself thin book and just in case I forgot to mention, it’s not only dairy free but fat free too. So if you need a low calorie treat, then this recipe is for you. This is a dairy free zucchini vanilla cupcake recipe. (Updated pictures)

I call it the best pasta sauce because once you taste it, you will definitely agree with me. So let’s get started, this is the best pasta sauce recipe.

SIMPLE PORK STIR-FRY RECIPE

simple pork stir fry recipe

Hello Everyone

I hope you all had a lovely weekend and got to plan for your week ahead. As for me, It was yet another trip to the grocery store and finally got to change my menu, which I normally do after two weeks or switch up some meals once they have become too much for my picky little eater. My son loves noodles and I mean really loves them and so every week, it has to be on the menu and it’s the only meal that never changes.

I usually change the meat we eat it with once in a while but so long as it’s noodles, my little boy is happy. My husband is more of the seafood and no sweet sauces type of man, and when I make my son’s meal, I change few things when finalising the meal to make it a bit different. So today was pork stir-fry which really went well and it’s very simple, so if you need to whip up a fast stir-fry meal, then this recipe is for you. Here is my simple pork stir-fry recipe.

MY BEEF PILAU RECIPE

MY BEEF PILAU RECIPE

Hello Everyone,

Pilau is what is on my mind today, I love pilau and always brings back great memories. I try to put it on my menu all the time until my family starts asking for something different then I know it’s time to give it a break. Known for being an Indian or Middle Eastern dish, I got to try my first pilau when I was younger and I’m guessing that was the Kenyan version which I learnt to make and still do the same way I saw back then. I used beef instead of chicken in my pilau but it can also be made into a veggie version. For my beef pilau recipe, you will need;

The other difference is that what accompanies the potatoes is all up to my family’s choice. This is a recipe for my garlic and herb roasted potatoes which I have finally been able to perfect after many failures of soggy and burnt potatoes. It’s very simple and all you need is;
