DELICIOUS BAKED MAC AND CHEESE

Hey guys,

I hope you had a fabulous weekend. My weekend was full of spring cleaning, cooking and lots of playing with my son which is practically what happens every other weekend. My son really loves pasta and anything you can throw into pasta he will be up for it. I decided to make mac and cheese because his milk allergy has started going away and I was excited that he can at least start eating some cheese and desserts which he missed out on when he was younger.   • 250gms Macaroni pasta
  • 175gms Pancetta
  • 4 Spring onions
  • 100gms Grated Cheddar cheese
  • 50gms Stilton cheese
  • Salt

  • 2½ Tablespoons of flour
  • 2 cups of Milk

Hello Everyone

I hope you all had a lovely weekend and got to plan for your week ahead. As for me, It was yet another trip to the grocery store and finally got to change my menu, which I normally do after two weeks or switch up some meals once they have become too much for my picky little eater. My son loves noodles and I mean really loves them and so every week, it has to be on the menu and it’s the only meal that never changes.

I usually change the meat we eat it with once in a while but so long as it’s noodles, my little boy is happy. My husband is more of the seafood and no sweet sauces type of man, and when I make my son’s meal, I change few things when finalising the meal to make it a bit different. Pilau is what is on my mind today, I love pilau and always brings back great memories. I try to put it on my menu all the time until my family starts asking for something different then I know it’s time to give it a break. Known for being an Indian or Middle Eastern dish, I got to try my first pilau when I was younger and I’m guessing that was the Kenyan version which I learnt to make and still do the same way I saw back then.
